Beef Stew
Ingredients

1 tsp dried thyme

1/4 tsp black pepper ground

2 tbsp salt

6 medium carrots cut into 1/2-inch pieces

4 medium potatoes cut into cubes

2 lbs beef cut into 1-inch cubes

4 stalks celery cut into 1-inch pieces

4 tbsp flour
-
4 tbsp vegetable oil

6 cups V8 Juice

4 cups beef broth
-
2 medium onions chopped

2 bay leaves
Directions
- Coat the beef with the flour.
- Heat the oil in the pot over medium-high heat.
- Add the beef and cook until it's well browned, stirring often.
- Remove the beef from the saucepan and pour off any fat.
- Stir the V8 and broth into the pan and heat to boiling.
- Add remaining ingredients, including beef, back into the pot.
- Reduce heat to low and cook for 3 hours.
