Vietnamese Style Beef Meatballs



  1. Combine all ingredients and let sit, covered, in refrigerator overnight.
  2. Process mixture in a food processor into a creamy paste.
  3. Place mixture in freezer for 30 minutes.
  4. Bring a pot of water to boil and prepare and ice bath.
  5. Form and boil meatballs, 7 minutes per batch.
  6. Remove meatballs and place in the ice bath for 3 minutes.
  7. Freeze or serve meatballs.
